what effects the sweetness or lack of sweetness of figs, my white adriatic are ripening and being picked now and they are beautiful and plump and soft to touch but not overly sweet?

The usual reason is rain during ripening - tends to swell, split and dilute the fruit.
A perfect season in Sydney for figs. The amount of local produce I've just been sent indicates a huge crop to share around based on our wet spring and early summer. But next to no rain for the last 6 weeks to harvest means the fruit are beautiful to look at and eat.
